on a night like this, the only real option for dinner is soup. my friend meg put the idea in my head. and i’m so glad she did. we used a butternut squash. so simple and so good. first we sauteed a few onions. then we chopped up a squash that we bought back in december from black river farms. for some reason, chopping raw butternut squash leaves my hands dry, so james does this part. we added the squash to the onions and mixed in sea salt, fresh pepper, and some dried sage. next we added water and bay leaves and let it all simmer for twenty minutes or so. we decided to puree the whole pot in the blender. james grated some asiago on top. delicious.

    love love love squash soup and am always trying little twists with it. Adding a little curry blend and some coconut milk is nice and yes, sage and squash are best friends so I do that combo quite a lot. Think I need to make a pot tonight because it is raining buckets here and is still so dark and cold.
