i read this article in the new york times yesterday and got even more excited about my canning and pickling plans for this summer! last winter, james and i discovered that one of his dad’s favorite snacks (pickled beets) were floating around in a not so appetizing, and certainly unhealthy, mixture of corn syrup and more corn syrup. so we’re looking forward to canning a few of our own, sans hfcs. i’ve never canned anything before, but i can’t wait to wrap up some of summer’s goodness in pretty glass jars. for more great preserving tips, check out posts by rebecca and amy! cheers.
