When I first typed the title, I accidentally wrote persevering. Make no mistake, friends–to complete a marathon day of canning is to persevere indeed. On Sunday, we joined friends to pickle green beans and okra, cauliflower and eggplant, carrots and daikon radish, not to mention making apple butter and asian pear jam. We had plans for canning honey peaches but when hour six of canning came around, we needed sustenance in the short term and we bit into those in the summertime way–skin still on, juice dribbling out. Not a bad way to say goodbye to one season and usher in the next. Fall, we’re ready for you.

    canning is something I've been wanting to try. Looks like such a fun activity to do with friends too! Also… Asian pear is awesome just eating it alone, I can't imagine how delicious it is as jam!

    This looks like so much fun!!! When autumn rolls around for us southern hemisphere kids next March, I plan on catching a bus down to my Aunty's farm and learning how to do this šŸ˜€

    So beautiful. I really like the things you decided to preserve; gives me some good ideas! I will be preserving my harvest for the first time this year when I take a tomato canning workshop. Maybe next year I'll branch out a bit more!

    Oh, canning. A friend and I had our own marathon canning session (tomatoes) a few weeks ago…it's exhausting. But the results are beautiful. Your photos are making me want to can a new batch of veggies and fruits!

    What a great idea to do a marathon session with friends! I have become increasingly interested in canning since doing a food intolerance testing diet. As we also live inner city in an apartment we are now going to clean out our unused liquor bottles to make space for the canning jars!

    I absolutely love canning. My mom and I are obsessed with capturing the flavors of summer in glass mason jars. What a great way to welcome the new season. And by the way, these pictures are amazing.

    Do you have any recipes that you've found to be tried and true? The green beans and the diced vegetables both look so good!

      Hi Shayla! We used Carrie's recipe for dilly beans: here. I've had these guys and they're delicious. The mixed veggies we haven't tasted yet, and I have to admit that I didn't find the recipe and am not quite sure where it came from. Once we try them, I'll let you know if they're tasty!
