Here’s a simple thing to do with the last bedraggled strawberries you might have. And isn’t it funny there are always a few that get left behind? Well, when small fingers pick around berries that are a bit bruised or a bit smushed or otherwise worse for wear in favor of the berries that are firm and ripe and jewel-like, strawberry lemonade is a solution.
It’s as simple as adding a few strawberries to the blender while you’re whirring it for a refreshing treat. The result is pink and frothy and far more deserving of your time than anything stirred together from powdered mix.
I made a double batch of blender lemonade this weekend at my mom and dad’s house. In addition to the strawberries, I added the juice of one more lemon, preferring an extra lemony-punch but not wanting to add too much more in the way of pith or pulp. Served over ice and with a sprig of mint, it was just right. If you wanted to mix it with a bit of sparkly white wine or seltzer, you wouldn’t be wrong. My only other advice for serving is to keep a spoon nearby so that an occasional swirl keeps it well mixed and not too much separated into its parts.
Blender Lemonade: Strawberry Edition
Adapted from this blender lemonade recipe.
What you need:
2 whole lemons, scrubbed within an inch of its life; plus juice from 1 more
6-8 ripe strawberries
4 cups of very cold water
8 ice cubes
6 tablespoons sugar
What you need to do:
+ Quarter your lemon. Remove the seeds and the thickest part of the pith from each lemon slice.
+ Add to the blender with several ice cubes, cold water, sugar, and juice of an additional lemon. (Honey or agave would work, too.)
+ Blend for a full minute until the mixture is frothy.
+ Pour over ice to serve.
+ The lemonade will be cloudy bright pink in color and very delicious. Serve immediately.
