september is a tricky little month. it gets you all geared up for a blustery fall but then it gives you glorious days that make you want summer never to leave.
james has been working for a local farmer on the weekends and a major perk of the job is the fact that he comes home with a bag overflowing with rhode island produce.
yesterday, two ears of sweet corn found their way into his bag.
this morning, corn pancakes. a childhood favorite of mine that i love even more with each passing year.
moral of the story? enjoy the last few days of summer. put some sweet corn in your pancakes.

Never had corn in my pancakes. I love adding it in with the cornmeal muffins, so I don't see why I wouldn't like it in pancakes. I will try this. š
